Before peach season is over you should give this bellini recipe a try. It is sure to brighten up any meal.
2 peaches (peeled and diced)
1 Tablespoon fresh lemon or lime juice
1 tsp sugar (we used ginger sugar)
Blend everything together in a food processor or blender. Place 2 Tablespoons of mixture into a champagne flute, fill with prosecco, give a little stir, and enjoy!
