All these tag lines and catch phrases can be applied to the mystical occurrence that has been given the name brunch.

That’s why the Craic Team that brought you The Tower of Tex Mex loves brunch. It is synonymous with fun, good times, and great food.

Sooo, this past Sunday they started with an idea, a food fiesta really: chilled shrimp salad with tomatoes and avocado in a lettuce wrap.

Then this happened:

5 Spice Brunch

A very similar concept in that it was a chilled shrimp lettuce wrap….

But completely different.

The Craic Team had visions of a chilled shrimp salad with avocado and tomato and corn and hot peppers but then they found a sweet potato on the edge of expiration and all hell broke loose. That did NOT fit into their plans.

So the plans changed.

And they roasted that sweet potato with Garam Masala and pan sautéed that shrimp with Chinese 5 Spice and some peppers and uncooked ramen noodles and onion and a garlic clove or two. They made some peanut sauce, grated a carrot, chopped up some Thai basil, threw it all together on a lettuce leaf and called it brunch.

As John Lennon said, “Life is what happens while you are making other plans.”

Grilled Peaches

It’s the end of summer *sigh* I thought it would last forever.

Alas, our summer frolics must come to an end, but lucky for us with our South Carolina weather our grilling and chilling may continue! However we are at the end of peach season, so we thought as a last hurrah we’d grill peach halves with some of our ginger sugar!

They are pretty darn tasty with ginger sugar but if you want a more savory side dish we suggest a light sprinkle of Cocoa Nib Rub!

So throw those last peaches on the grill with some ribs and enjoy these last few days of summer!Grilled Peaches

Pizza dough!

pizza!!

There are times in life when you have to put a lot of things on your pizza to make it right. Sauce, spinach, basil, artichoke hearts, olives, three cheeses, onions, then some mozzarella, then green peppers and chipotle flakes for good measure.

You have to ask yourself, how much is too much? Will my crust be able to support my hopes and dreams without becoming a soggy floppy mess? With a hearty crust like this one, you don’t have to second guess your pizza goals or live with the regret of never achieving your full pizza making potential.

Pizza!!

Here’s what ya need:

1 cup H2O

3/4 teaspoon honey

1 1/2 teaspoons salt

1 1/2 Tablespoons extra virgin olive oil

2 2/3 cups bread flour

1/2 cup + 1 Tablespoon whole wheat flour

1 3/4 teaspoons active dry yeast

1 Tablespoon dry roasted garlic

If you have a bread maker, use the kneading paddle and put all ingredients into your machine in the order listed. If you are using a mixer, use the hook attachment and knead all ingredients until dough is smooth and a little warm.

Remove dough from bread maker or mixer and place in an oiled bowl, cover with a towel or cling wrap. The dough will be ready to use once it has doubled in size!!

We found that throwing it down on a cookie sheet lined with parchment paper and rolling it out with a rolling pin was the easiest way to get an even crust.

Load it up with all the goodies you can find and then bake in the oven at 475 F for 15 minutes or until browned to your liking.

Pizza!!

Foolproof vanilla ice cream

Because sometimes the only cure for a bad day or bad pie is a little vanilla ice cream.

Vanilla Ice Cream

All you need is an ice cream maker and the following ingredients:

1 cup milk

1 cup vanilla bean sugar

3 cups heavy cream

Combine milk and sugar and stir until sugar dissolves then stir in heavy cream. That’s the long and short of it, now follow your ice cream maker’s instructions to turn this base into ice cream!!
