This cake is really good. You should make it.
This cake is perfect for a coffee break or afternoon tea (or breakfast). Moist yet airy and cakey, it’s just delightful.
Oh, and it’s super easy to make.
Here’s what you need:
3 apples, cored and diced
1 cup granulated sugar
2 eggs
1 cup all-purpose flour
1/4 teaspoon salt
2 teaspoons Chinese 5 Spice
2 teaspoons baking powder
1/2 cup olive oil
1 teaspoon Vanilla Extract
1/2 cup chopped pecans
2 teaspoons granulated sugar
1/2 teaspoon Chinese 5 Spice
Preheat oven to 350°F and grease a deep 8×8 baking dish.
With your electric mixer, beat sugar and eggs on high speed for 15 minutes.
In a small bowl combine flour, salt, Chinese 5, and baking powder.
Add oil to your egg mixture. Add flour mix and blend well. Add vanilla.
Fold in apples and pecans then pour batter into your prepared dish!
Miz together the 2 tsp sugar and 1/2 tsp of Chinese 5 and throw that onto your cake. Bake for 50 to 60 minutes or until an inserted toothpick comes out clean.
Let cool and enjoy! Serve warm with ice cream or devour at room temp with a nice cup of coffee.
