Things are starting to heat up here in Charleston. In anticipation for warmer nights and hotter days we are testing out ice cream recipes.

Here’s what ya need for cool creamy chocolaty ice cream goodness:

1 cup cocoa nib powder

2/3 vanilla bean sugar

1/2 firmly packed brown sugar

3/4 cup water

4 cups heavy cream

Mix the first four ingredients together and using an electric mixer or by hand stir until sugars are dissolved. Pour in the heavy cream and blend. Pour into your ice cream maker and follow the direction of your machine from there!!!

Chewy Dreamy Oatmeal & Coconut Chocolate Chip Cookies

Yup, that’s a mouthful of a title, but just try these cookies and you’ll get it.Oatmeal Coconut Chewy Dreamy Cookie

Before you make these you should know that they are better the day after they are made.

Sure, you can eat them right after they come out of the oven, but they will not be great, and you may be incredibly disappointed in me.

SO JUST WAIT FOR IT.

Hide them away after you make them and the next morning treat yourself to one for breakfast (HOWEVER if you are still in elementary or middle school don’t tell your mom I said it was okay for you to eat cookies for breakfast. You should never have cookies for breakfast (unless it’s your birthday). Oh and please don’t drink coffee yet either, save it for later in life, okay?).Oatmeal Coconut Chewy Dreamy CookieHere’s what you’ll need:

1 cup of butter (2 sticks)

1 cup firmly packed brown sugar

1/2 cup granulated sugar

2 eggs

1 1/2 cups all-purpose flour

1 teaspoon Poudre Douce (or pie spice or cinnamon)

2 tablespoons cocoa powder

1/2 teaspoon salt

1/2 teaspoon baking soda

2 cups oats

2 OVERFLOWING cups shredded coconut, toasted

1/2 OVERFLOWING cup pecans, chopped

1 OVERFLOWING cup chocolate chips

Preheat oven to 350 F.

Beat together butter and sugars until creamy. Add eggs and beat well. Add combined flour, Poudre Douce, cocoa powder, salt, and baking soda. Mix well. Slowly stir in oats, coconut, pecans, and chocolate chips.

Place about 2 tablespoons worth of dough a couple of inches apart on a parchment paper lined baking sheet. Bake for 13 minutes, let cool on sheet for a couple of minutes then move to wire rack to continue cooling. Store in airtight container for at least 12 hours before enjoying.

Chocolate Ice Cream!!!!!!!!!!!!

Here’s a recipe for ice cream that is just bursting with rich decadent chocolate flavor:

1 cup cocoa nib powder

2/3 cup vanilla bean sugar

1/2 cup firmly packed brown sugar

1/2 cup heavy cream

1/2 cup water

3 1/4 cups heavy cream

Place cocoa nib powder and sugars in a bowl and stir to combine. Add 1/2 cup of heavy cream and 1/2 cup water and stir until sugars and cocoa are dissolved. Add the rest of the heavy cream. Pour this into your ice cream maker and follow your machine’s instructions!

As you can see we topped ours off with fresh peaches, homemade chocolate sauce, and bacon! But this ice cream is tasty enough to eat it all by itself!

Chocolate Sauce

Isn’t everything better with a little chocolate sauce? Ice cream, crepes, fruit, waffles, pancakes, sundaes, cocktails, yogurt, coffee drinks… I could go on for days about all the things that are made better with a little chocolate but then we’d never get to the point of this post!

Here’s how to make dreams come true, its simple, you only need four ingredients:

Chocolate Sauce: the ingredients

 

1/2 cup H2O

1/2 cup vanilla bean sugar

1/2 cup cocoa nib powder

a dash of salt

In a saucepan stir together the sugar, cocoa nib powder, and salt. Slowly add water and stir together. Once all the ingredients are combined with no lumps, place the sauce pan over medium heat for 3 to 5 minutes, stirring constantly. Remove from heat. If not using immediately pour sauce into an airtight container and refrigerate for later enjoyment!
